Blueberry Lemon Squares
- For the Crust:
- 1 cup butter, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- For the Filling:
- 1/2 cup granulated sugar
- 3 tablespoons all-purpose flour
- Juice and zest of one lemon
- 3 eggs
- 2 cups fresh or frozen blueberries
- Heat oven to 400.
- Crust: spray 9" square baking dish.
- In med bowl, use electric mixer on low to beat butter, powdered sugar, and van until fluffy
- Add flour and beat just until forms small crumbs
- Press about 2/3 of mixture in bottom of pan. Set aside remainder of mixture.
- Bake for 12 - 15 min, until lightly browned.
- Reduce heat to 350
- Filling: Mix sugar, flour, lemon zest & 1/8 tsp salt.
- Add eggs & lemon juice - whisk til smooth.
- Spread blueberries over the crust.
- Pour filling over blueberries
- Sprinkle reserved crumb mix over top.
- Bake 30 - 40 min, til topping is golden and filling is puffed
- Transfer to wire rack and cool completely before cutting
