Kale Salad With Caper/Dijon Vinaigrette

  1. Fry bacon until crispy.
  2. For Vinaigrette mix anchovies, mustard, capers, shallot, garlic vinegar and oil in blender until smooth.
  3. Remove bacon and reserve 1/4 cup of grease in pan.
  4. Chop bacon into bite size pieces.
  5. Add bread to bacon grease and stir until fried.
  6. Toss kale, bacon, marinated onions, feta cheese, bread crumbs, 1/3 cup dressing and serve.
