Spicy Chorizo-Stuffed Portabellas
- 1 pound of chorizo
- one medium onion
- one green pepper
- 2 stalks of celery
- 8 cloves of garlic, minced
- 1/4 cup of jarred jalapenos, chopped
- 1 9 oz. bag of fresh baby spinach
- 1 pkg of boxed "dirty rice" (don't add ground beef), cooked
- 1 cup of 2% shredded mexican cheese blend
- Thinly slice the onions, celery and pepper into the pan. Add the chorizo and garlic, and cook until chorizo is done. Add the jalapenos and spinach and cook until spinach is cooked down and thoroughly mixed. Meanwhile cook the packaged "dirty rice". When done, fold this into the stuffing mixture, and add the cup of cheese. Mix thoroughly and stuff into portabella. Stuffs 4 large portabellas or 2 large eggplants.
