Pulled Chicken
- 4 3/4 lbs bone-in chicken breasts (about 6 or 7)
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 T coconut oil
- 5 tsp chili powder
- 6 oz tomato paste
- 3/4 c. Ketchup
- 1/4 c. Molasses
- 1 1/2 T whole grain mustard
- 2 tsp honey
- 4 tsp cider vinegar
- 2 -3 tsp sriracha or mild hot sauce
- 1/2 tsp liquid smoke (optional)
- Saute onions and garlic until onions soften, approximately 7 minutes. Add chili powder and continue to stir about a minute. Whisk together remaining ingredients except liquid smoke (if using) and chicken. Put chicken in pot, pour sauce over and stir to combine. Cover and cook on lowest flame for about 2 hours, stirring occasionally (if sauce starts to bubble, use flame tamer to maintain bare simmer). When just cooked through, take the chicken out of the sauce and set aside for at least 15 minutes so you don't burn your damn thumbs. Pull chicken off bones and shred. Skim any fat off sauce, add liquid smoke if using. Return shredded chicken to sauce and serve.
