Erin'S Secret Chili
- Meat:
- 1 lb ground beef
- 1 lb sausage meat (remove casing)
- 1 lb stew beef chunks (cut into 1 inch pieces, or smaller)
- Everything else:
- 1 15 oz can kidney beans
- 1 can baked beans
- 1 can pinto beans
- 4 pieces chipotle chiles (canned)
- 2 30 oz cans crushed tomatoes with puree
- Seasonings:
- 1 large onion
- 3 tbsp chili powder
- 3 tbsp paprika
- 2 tbsp oregano
- 1 tbsp cumin
- 3 cloves garlic
- salt to taste
- Topping:
- shredded cheese, Monterrey Jack
- diced green onions
- Fritos chips
- Optional:
- Serve over corn muffins or rice
- 1) Dice onions and saute with oil on medium high heat
- 2) Add all seasonings, stir for a minute
- 3) Add all meat and salt, brown the meat 5 min
- 4) Add everything else, cook on low heat for at least 2.5 hours
