Potato Chip Cookies
- 3/4 c. margarine, softened
- 3/4 c. sugar
- 1 egg yolk
- 1 tsp. vanilla
- 1 1/4 c. all-purpose flour
- 3/4 c. finely crushed potato chips
- 3/4 c. finely chopped walnuts or pecans
- 3 Tbsp. sugar (for dipping)
- pecan or walnut halves (for cookie tops)
- Preheat oven to 375u0b0. In large mixing bowl, cream margarine, sugar, egg yolk and vanilla until light and fluffy. Add flour, potato chips and chopped nuts. Mix well. Form into 1 1/2-inch balls and place 3-inches apart on ungreased cookie sheets. Grease bottom of a glass about 3-inches in diameter. Dip greased glass into sugar and use to flatten each ball. Place nut half in center of each cookie. Bake 8 to 10 minutes. Cool slightly before removing from cookie sheets. Then cool on wire racks. Makes 2 1/2 dozen.
