Fruit Cobbler
- 2 cups water or oatstraw tea
- 1 cinnamon stick
- pinch powdered cloves
- pinch powdered licorice
- 1/2 t ginger powder
- 1/2 c frozen blueberries
- 1/2 c frozen cranberries
- 1/2 c frozen cherries
- 1/2 c raisins
- 1/4 c rose hips, dried
- 1 large pink lady apple, cubed
- 1 egg, separated
- 1/2 t cinnamon
- pinch salt
- 3 T almond flour
- 3 T mesquite flour
- 1/4 c milk
- 2 T butter, melted
- Simmer fruit with cloves, ginger, licorice and cinnamon stick until apple is soft and sauce is thick.
- Preheat oven to 350 degrees.
- Combine flours, cinnamon, salt, milk and egg yolk.
- Beat egg white until light and fluffy.
- Fold batter mixture into beaten egg white.
- Spread fruit in small casserole dish. Spread batter over fruit.
- Bake 30 minutes.
