Low Calorie Vegitarian Lasagna
- 2 eggplant
- 4 zucchini
- 1 clove of garlic
- ricotta cheese
- mozzarella cheese
- spinach
- fresh basil
- dried oregano
- 1 can whole tomatoes (fire roasted preferable)
- 1 jar of tomatoe sauce
- 1. Preheat oven to 350 degrees
- 2. If you are blessed to have access to Trader Joe's, they have a pre-grilled and pre-sliced bag of eggplant and zucchini. These already have enough olive oil so no more is needed
- If Trader Joe's has not made it to your neighborhood yet, then slice the zucchinis and eggplant in long-ways and place on them on the grill. Remember to sprinkle eggplants with salt to sweat out the bitterness and blot out the excess.
- 3. Rough chop fresh basil to taste.
- 4. Break whole tomatoes into bite sized pieces.
- 5. Place eggplant and zucchinis in baking dish then ricotta cheese then lightly sprinkle basil, oregano and frozen spinach then roasted tomatoes and tomatoe sauce.
- 6. Repeat step 5. until reach the top of the dish.
- 7. Sprinkle with basil and mozzarella.
- 8. Cook for 20-25 mins. All the ingredients are already cooked; so it's more about getting the cheese melted and the flavors combined.
