American Purple Slaw
- 1/2 head of white cabbage
- 1/4 head of red cabbage
- 3/4 cup of slivered carrots (can be shredded)
- 1/2 cup of thinly sliced onions
- 1/2 cup of packed, chopped cilantro
- 1 jalapeno, slivered (optional)
- 1 tsp of minced garlic
- 1/2 cup red wine vinegar
- 1/3 cup olive oil
- 1 TBSP of honey
- salt and pepper (to taste)
- 1/2 lime (to taste)
- Slice both cabbages into long, slim slivers and combine in a large bowl. Add slivered carrots, thinly-sliced onions, chopped cilantro, and jalapeno (if desired), mix veggies together.
- Make vinagrette -- in a small bowl add vinegar, garlic, and honey. Slowly wisk in olive oil; salt and pepper to taste. Pour over veggies. Finally, squeeze lime over the slaw to taste. You can eat right away or marinate.
