Nanaimo Bars
- BASE
- 3/4 cup butter
- 1/3 up sugar
- 1/2 cup cocoa
- 1.5 tsp vanilla
- 2 eggs
- 3 cups graham cracker wafer crumbs
- 1 1/2 cups coconut
- 3/4 cup chopped walnuts
- FILLING
- 6 tbsps butter (or margarine or shortening)
- 3 1/2 ounce package of vanilla instant pudding powder (102 grams)
- 3 cups sifted icing sugar
- 1/3 cups milk
- 1 tsp mint flavouring and green food colouring (optional for mint bars)
- TOPPING
- 3 tbsps milk
- 1 cup semi-sweet chocolate chips (175 gram package)
- BASE
- place butter, sugar, cocoa, vanilla, & eggs in large bowl, stir until well blended
- In another bowl, combine dry ingredients, then add this to the other mixture.
- Mix until well blended.
- Press firmly into 9x13x2" pan
- FILLING
- Cream butter in medium sized bowl
- Mix pudding powder & icing sugar together, then add to butter, along with milk
- Beat until it resembles cake icing
- *** Add flavouring and food colour at this point if desired***
- Spread filling evenly over base and chill pan for 15 minutes, until firm
- TOPPING
- Heat milk in double boiler
- add chocolate chips, stir constantly until smooth
- *** Microwave option***
- combine milk and choc. chips and put in microwave for 20 seconds, then stir, repeat until it is smooth
- Spread melted chocolate quickly and evenly over contents of chilled pan.
- Refrigerate for at least 2 hours, then cut into bars before serving
- yields about 30 bars
