Cabbage & Cornbread Casserole
- 5 cu coarsely chopped cabbage
- 2 T butter
- 2 T flour
- 1/2 t salt
- 1/8 pepper
- 1+1/4 cu milk
- 1/2 cu yellow pepper, chopped
- 1/2 cu cheddar cheese, shredded
- 1/4 cu onion, chopped
- 4 cu prepared crumbled corn bread
- 1. Preheat oven to 375. In a medium saucepan cook cabbage covered in a small amount of boiling, lightly salted water for 5 minutes, drain.
- 2. In the same saucepan melt butter. Stir in flour, salt and pepper. Add milk all at once. Cook and stir over medium heat until thickened and bubbly. Stir in yellow sweet pepper, cheese and onion. Stir until cheese is melted. Remove, from heat.
- 3. Place 3 cups of the corn bread in a 2 qt casserole. Top with cooked cabbage, sauce and then the remaining 1 cup of cornbread. Bake, uncovered, for 30 -35 min. or until heated through.
