Banana Bread
- 1 3/4 cup of whole wheat flour (or your favorite type of flour)
- 2 teaspoons of baking powder
- 1/2 teaspoon of salt
- 1 tablespoon of ground flax seed (optional)
- 2 eggs
- 1/2 cup of Soom Foods tehina
- 1/4 cup of maple syrup or honey
- 1/2 cup of brown sugar (3/4 cup if you like it a bit sweeter)
- 3 ripe bananas (or 4 small ones)
- 1/2 cup of coconut milk (regular milk, or any type of "milk" you like; almond, rice, oat, etc.)
- 1/2 cup of crushed walnuts or chocolate chips
- Pre-heat the oven to 355 degrees F
- Mash the bananas with a fork and set aside.
- In a large bowl combine the flour, baking powder, salt, and flaxseed.
- In a separate bowl combine the eggs, tehina, honey, and the brown sugar. Mix until all of the ingredients are evenly combined.
- Add the mashed bananas and the coconut milk to the tehina mixture.
- Add the tehina mixture to the bowl with the flour and stir until the mixture is evenly combined. Be sure not to over mix.
- Stir in the walnuts of chocolate chips.
- Pour the mixture into a greased Bundt cake pan and bake in the oven between 35-40 minutes.
