Butterscotch Bars
- 1 1/4 c. all-purpose flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/2 tsp. ground cinnamon
- 1 c. margarine, softened
- 3/4 c. sugar
- 3/4 c. packed brown sugar
- 2 eggs
- 1 tsp. vanilla extract or grated peel of 1 orange
- 2 c. quick or old fashioned oats
- 1 (12 oz.) pkg. butterscotch flavored morsels
- In small bowl, combine flour, baking soda, salt and cinnamon. In large mixing bowl, add butter, sugar, brown sugar, eggs and vanilla (or orange peel).
- Gradually beat in flour mixture.
- Stir in oats and butterscotch morsels.
- Spread dough into greased 15 x 10-inch jelly roll pan.
- Bake at 375u0b0 for 18 to 22 minutes or until very lightly browned.
- Cool and cut into 2 x 1 1/2-inch bars.
- Makes about 4 dozen bars.
