Pad See Ew
- t lbs. fresh broad flat rice noodles
- t egg
- t heads broccolini, chopped florets and stems separated
- t carrots, cut into match sticks
- t large onion
- t cloves garlic, minced
- t lb pork, sliced thinly into strips
- t tbsp soy sauce
- teanut oil for stir frying
- tTIR-FRY SAUCE:
- t Tbsp. oyster sauce
- t Tbsp. dark soy sauce
- t Tbsp. regular soy sauce
- t Tbsp. fish sauce
- t 1/2 Tbsp. brown sugar
- t/2 tsp. Thai pepper
- 1.ttir together the simple stir fry sauce: oyster sauce, soy sauce, fish sauce, brown sugar and pepper.
- 2.tour 1 tbsp of soy sauce over the strips of pork and mix well. Set aside to marinate while you prepare the other ingredients.
- 3.tf your fresh rice noodles came pressed together, take a few minutes to separate them (some may break or remain stuck together - this is normal). Note that if your rice noodles come direct from your refrigerator, it may help to very briefly microwave them before separating (see packet instructions).
- 4.tlace a wok over very high heat. Add 1 Tbsp. oil and swirl around.
- 5.tdd onion and stir-fry for 1 minute.
- 6.tdd the broccolini stems and continue stir-frying in the same way for 1 more minute
- 7.tdd carrots and broccolini florets, stir-fry 1-2 more minutes. Dump into bowl.
- 8.tdd 1 Tbsp. oil, then the garlic and briefly stir-fry, smashing garlic, until fragrant (30 seconds).
- 9.tdd the pork and stir-fry 2 minutes. Dump into bowl with veggie's.
- 10.tdd 2 Tbsp oil and break the egg into the center of the wok or pan. Quickly stir-fry to cook the egg (like making scrambled eggs).
- 11.tdd the noodles and pour the stir-fry sauce over. Gently lift and turn the noodles to mix with the sauce (these noodles break easily). Noodles will gradually soften (about 2 minutes).
- 12.tdd veggie's and pork, stir to mix.
- 13.then noodles are soft, remove from heat. Taste-test for salt, adding more fish sauce until desired taste is achieved.
