Blueberry Coffee Cake
- 3 Cups of all purpose flour
- 1 1/2 tsp baking powder
- 3/4 tsp baking sode
- 1/4 tsp salt
- 1/4 Cup light brown sugar
- 2 TBSP flour
- 1/2 tsp tsp cinnamon
- 3/4 Cup soft butter
- 1 1/2 Cup sugar
- 1 tsp vanilla extract
- 4 eggs
- 1 Cup sour cream
- 2 Cups blueberries
- 1 Cup confectionary sugar
- 1-2 tsp milk
- lightly grease & flour bundt pan.
- Preheat oven 350 degrees
- 1. Sift first 4 ingredients together - set aside.
- 2. Brown sugar, t TBSP flour & cinnamon in med bowl mix well.
- 3. Place butter in large bowl & cream, add sugar and vanilla, beat until light & fluffy. Add one egg at a time, add flour/baking powder mixture (in 5 additions); alternately with the sour cream (in 2 additions)
- 4. Gently dust blueberries w/1TBSP flour
- 5. Turn in 1/3 batter into pan
- 6. Sprinkle 1/2 of blueberries, repeat layering remaining batter & blueberries.
- 7. Place in center of oven, bake 60 minutes o until tester comes out clean.
- 8. Cool in pan 20 minutes, gently remove & drizzle with confectionary sugar mixture.
