Caribbean Crustacean Turnovers
- 16 Fillo sheets
- 2 Tbs. butter
- 1 Tbs olive oil
- 1 cup carrots (julienned)
- 1 cup onion (julienned)
- 1 cup celery (julienned)
- 1 cup mushrooms (sliced)
- 1/3 pound lobster meat (cut small)
- 1/3 pound crab meat (cut small)
- 1/3 pound shrimp meat (cut small)
- 1/3 pound scallops (cut small)
- 2 Tbs. butter
- 1 Tbs olive oil
- 2 cloves garlic (minced)
- 1 tbs. fresh parsley (chopped)
- Stir Vegetables in 2 Tbs butter and 1 Tbs. olive oil until just tender. (3-5 minutes). Set aside.
- Saute seafood in remaining butter for about 5-8 minutes or until cooked through. Add garlic and parsley. Saute for 1 minute more.
- Mix Seafood with Vegetables. Place about 1/4 cup mixture onto center edge of 2 sheets fillo dough. Fold in sides first and then roll. Do the same for all 8 turnovers. Place on lightly buttered glass baking pan. Bake at 350 degrees for about 15 minutes or until lightly golden.
