Broccoli Rice Casserole
- 1 1/2 c. cooked rice (1/2 c. raw)
- 2 c. fresh broccoli, chopped or 1 (10 oz.) pkg. frozen chopped
- 3/4 c. chopped onion
- 1/4 c. margarine or butter
- 1/2 c. cheese spread
- 1 (10 oz.) can cream of chicken soup
- 1 tsp. butter or margarine (for greasing casserole)
- 1 1/2 c. chopped chicken (optional)
- In 10-inch skillet, saute chopped onions and broccoli in butter or margarine until onions are tender.
- Cook rice according to package directions in 2-quart saucepan.
- Add chicken soup and cheese spread to onions and broccoli.
- Stir all this into cooked rice.
- Grease 2-quart casserole dish with 1 teaspoon butter or margarine.
- Pour mixture into this.
- Bake at 350u0b0 for 20 minutes or until it is bubbly.
- Serves 6.
