Alaska King Crab With Capers And Sun Dried Tomatos
- 1lb. Alaska King Crab
- 1/4 c. sun-dried tomatos
- 3/4 c. finely chopped celery
- 3 T. finely chopped shallots
- 1 c. white cheddar cheese-finely grated
- 2 T. white wine
- 2 T. freshly squeezed and strained lemon juice
- 1/2 t. freshly ground pepper
- 1 t. dry mustard
- 2 T. capers
- sea salt to taste
- mayonaise
- 1 lb. freshly washed baby spinach
- assortment of crackers and speciality appetizer breads for serving
- paprika
- sliced olives.
- Fresh crab can be used if available; if not frozen crab is also excellent. Combine all ingredients except mayonaise. Blend by hand until well mixed so as not to bruise the crab. Add only enough mayonaise to cause the mix to spread easily. Layer spinach and crab x2 onto crackers and/or speciality breads. Sprinkle with paprika and sliced olive. Top with fancy, twisler toothpick.
