Shrimp Gumbo

  1. In large Dutch oven, saute onion, celery, green pepper and garlic in oil until softened.
  2. Add sausage and saute 5 minutes longer.
  3. Add undrained tomatoes, chicken broth, water and thyme; bring to boil.
  4. Add rice, contents of seasoning packet and frozen okra or zucchini.
  5. Reduce heat, cover and simmer 20-25 minutes or until rice is tender.
  6. Add shrimp and cook 5 minutes longer.
  7. Stir in parsley and hot sauce. Season with salt and pepper to taste.
