Shrimp Gumbo
- One 6 oz. package Farmhouse(R) Spanish Rice
- 1 cup chopped onion
- 3/4 cup sliced celery
- 3/4 cup chopped green bell pepper
- 3 cloves garlic, minced
- 2 Tablespoons olive or vegetable oil
- 1/2 lb. sliced smoked sausage
- One 14.5 oz. can diced tomatoes, undrained
- One 14.5 oz. can chicken broth
- 3/4 cup water
- 1 teaspoon thyme leaves
- 1 cup frozen sliced okra or zucchini
- 1/2 lb. peeled and deveined shrimp
- 1/3 cup minced parsley
- 1/2 teaspoon hot sauce or to taste
- Salt and pepper to taste
- In large Dutch oven, saute onion, celery, green pepper and garlic in oil until softened.
- Add sausage and saute 5 minutes longer.
- Add undrained tomatoes, chicken broth, water and thyme; bring to boil.
- Add rice, contents of seasoning packet and frozen okra or zucchini.
- Reduce heat, cover and simmer 20-25 minutes or until rice is tender.
- Add shrimp and cook 5 minutes longer.
- Stir in parsley and hot sauce. Season with salt and pepper to taste.
