Zuchinni Quiche
- 4 cups Zuchinni sliced 1/8 thick
- 2 cups chopped onion
- 1 egg
- 8 oz shredded mozzarella
- 4 tbsp chopped parsley
- 2 tsp chopped basil
- 2 tsp chopped oregeno
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/2 pound butter
- 1 tsp dijon mustard
- 1 pie crust
- Preheat oven to 350
- place dough in 8 inch pie pan
- spread mustard evenly over dough
- in a seperate bowl mix the egg and mozzarella.
- in a frying pan , melt butter, add onion zuchinni and spices and saute until tender ( about 10 minutes)
- remove from heat and let cool for 15 minutes
- combine with egg and chees and pour into pie shell.
- bake at 350 for 20-30 minutes until knife inseted in center is dry.
