Breakfast Power Hash

  1. Dice onion and cube sweet potato. Heat over to 400F.
  2. Heat half tablespoon olive oil over medium high heat and brown sausage in heavy iron skillet. Set aside on plate, and add remaining tablespoon olive oil to skillet.
  3. Caramelize onions and sweet potato. After approximately 8 minutes, add can of tomatoes and cherry peppers.
  4. Add back the sausage and heat until combined; approximately 2 minutes.
  5. Drop red curry or chili paste in 1/4 teaspoon dollops around the skillet and top with grated cheese. Then crack each egg around the circumference of the skillet, with one egg in the middle. Sprinkle with paprika.
  6. Put the skillet in the oven for approximately 6 minutes to have eggs that are still slightly easy done. Remove and top with cubed avocado and cilantro.
