Stewed Okra, Corn And Tomatoes
- 1 lb. fresh okra
- 4 ears fresh corn or 1(16 oz.) can whole kernel corn
- 2 large tomatoes or 1 (16 oz.) can tomatoes
- 1 onion, minced
- 1/2 green pepper, chopped
- 1 tsp. salt
- 1/2 tsp. pepper
- 1/2 tsp. paprika
- 1/2 tsp. curry powder (optional)
- 1 tsp. brown sugar
- 1 Tbsp. cooking oil
- 1 c. water
- Remove and discard stem ends from okra.
- Cut each pod into 4 slices.
- Cut kernels from ears of corn.
- Peel and slice tomatoes. In a heavy skillet, saute onion in oil.
- Remove from skillet. Saute okra until browned.
- Add tomatoes, onion, green pepper, all seasonings and water.
- Bring to a boil.
- Reduce heat and simmer 15 minutes.
- Add corn and simmer until tender.
- Serves 6.
