Autumn Fish Stew

  1. Remove frozen fish
  2. fillets
  3. from freezer, let stand at room temperature 15 minutes to thaw slightly.
  4. Meanwhile, in a 4-quart saucepan

  9. hot salad oil, cook onion until tender.
  10. Stir

  12. tomatoes with their liquid and potatoes, salt, basil, pepper and sugar.
  13. Over high heat, heat to boiling.
  14. Reduce heat to low, cover and simmer 10 minutes, stirring
  15. occasionally. With
  16. sharp
  17. knife,
  18. cut fillets into bite-size
  19. chunks,
  20. add fish
  21. and frozen vegetables to tomato mixture, over high heat, heat to boiling.
  22. Reduce heat to low, cover and simmer 5 minutes or until fish is tender.
