Garden Fresh Couscous Salad
- 2 cups water
- 1 tablespoon instant chicken bouillon granules
- 1 10 oz pkg couscous ( 1 1/3 cups)
- large carrot, shredded
- 1 large green pepper, cut into 1/2 inch squares
- 1 large zucchini, halved lengthwise and thinly sliced
- 1 large yellow summer squash, halved lengthwise and thinly sliced
- 1 cup cherry tomatoes, halved
- 1 8 oz bottle Italain salad dressing
- In a medium saucepan mix 2 cups water and bouillon granules, bring to boiling. Add couscous. Remove from heat, cover and let stand for 5 minutes or till liquid is absorbed. Transfer to a 2 1/2 quart covered container.
- Add carrot, green pepper, zucchini, yellow summer squash, and cherry tomatoes, mix well. Add salad dressing toss to coat. Cover and chill for 6 to 24 hours
