Spicy Southwestern Bean Burgers
- 3 Tbs water
- 1 teaspoon VegiZest
- 1 large onion, finely diced
- 4 cloves garlic, minced or pressed
- 1/2 teaspoon oregano
- 1 Tbs. jalapeno peppers, minced
- 1 small green pepper, finely diced
- 2 15 oz. cans black beans, drained
- 1 slice 100% whole wheat bread, crumbed in blender
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili powder (or more, to taste)
- 8 whole wheat buns
- 2 tomatoes, sliced
- 8 leaves romaine lettuce
- 1/2 C. salsa
- In large nonstick frying pan, heat water and dissolve Veggie Zest. Saute onions, garlic, oregano, jalapenos, and green pepper until onions are translucent. Remove from heat. In a large mixing bowl, mash drained black beans with a potato masher. Add bread crumbs, sauteed veggies, and spices and mix well. Form into 8 patties. Place frying pan back on medium heat and cook burgers about five minutes on each side, until lightly browned. Serve on buns with lettuce, tomatoes, and salsa.
