Nut Bars
- Base:
- 3/4 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 cup unsalted butter
- 1/2 cup sugar
- 6 egg yolks
- 1/2 teaspoon salt
- Topping:
- 3 cups ground nuts
- 1-1/2 cups sugar
- 1 teaspoon rum
- 6 egg whites
- 1 envelope vanilla sugar
- Cream butter and sugar until light and fluffy. Blend in egg yolks, one at a time; sift together flour, baking powder, and salt, and add to creamed mixture slowly, stirring just long enough to make a smooth batter.
- Line a square or oblong cake pan with parchment paper, buttered, and spread batter evenly over bottom.
- Beat egg whites until soft peaks form, then add sugar slowly and continue beating. Gently fold in nuts, rum and vanilla. Spread mixture over dough in pan.
- Bake in 325F oven for 45 to 50 minutes, until cake starts to pull slightly away from sides.
- Cool cake in pan. Cut into bars.
