Nut Bars

  1. Cream butter and sugar until light and fluffy. Blend in egg yolks, one at a time; sift together flour, baking powder, and salt, and add to creamed mixture slowly, stirring just long enough to make a smooth batter.
  2. Line a square or oblong cake pan with parchment paper, buttered, and spread batter evenly over bottom.
  3. Beat egg whites until soft peaks form, then add sugar slowly and continue beating. Gently fold in nuts, rum and vanilla. Spread mixture over dough in pan.
  4. Bake in 325F oven for 45 to 50 minutes, until cake starts to pull slightly away from sides.
  5. Cool cake in pan. Cut into bars.
