Cinnamon Rolls

  1. Combine milk and butter in glass measuring cup.. Microwave on high until butter melts and mixture is just warm. Pour into bowl of stand mixer. Add I cup flour, sugar, egg, yeast and salt. Beat on low 3 min. Add 2 1/2 cup of flour. Beat on low until all flour is absorbed and dough is sticky. If dough is very sticky, add more flour by spoon until dough begin to form a ball. Turn dough on to floured surface and knead for 8 min until smooth and elastic.
  2. Oil large bowl and put the dough in it, turning to coat. Cover with plastic wrap, then kitchen towel. Let rest in warm place for 2 hrs.
  3. FILLING
  4. Mix brown sugar and cinnamon.
  5. Pinch down dough. Transfer to a floured surface. Roll out to 15x11" rectangle. Spread butter over dough. Sprinkle with cinnamon sugar and nuts and raisins. Starting at long side roll dough into log. With seam side down cut dough with sharp knife into 18 slices.
  6. Oil two 9" square baking dishes. Put rolls in. Cover with plastic and kitchen towel. Let rise for 40 min.
  7. Oven 375F (190C). Bake about 20 min. Cool slightly before glazing.
  8. GLAZE
  9. Combine cream cheese, powdered sugar, butter and vanilla. Using electric mixer, beat until smooth.
