Doubletree Post Oak Christmas Cookie
- 3/4 lb. butter or 3 cubes
- 1 c. granulated sugar
- 3/4 c. brown sugar
- 4 eggs
- 1 tsp. vanilla extract
- 1 1/2 lb. white chocolate baking chips or chocolate chips
- 8 oz. dried cranberries (cranraisins)
- 8 oz. chopped pecans
- 4 c. all-purpose flour
- 1/3 tsp. salt
- 1/2 c. quick rolled oats
- 1/2 tsp. cinnamon
- 3/4 tsp. baking soda
- 1 tsp. real lemon juice
- Preheat oven to 375u0b0.
- Cream butter and sugar; add eggs and vanilla. Beat at low speed until mixed. Combine dry ingredients in a separate bowl. Slowly fold flour into the butter mixture. Add lemon juice concentrate; blend well. Fold in white chocolate, cranberries and nuts.
