Wild Mushroom Tamale With Black Truffles

  1. 1. In a sauce pan over medium heat, heat the olive oil and sweat the galic and onion for 2 minutes. Add the wine, raise the heat to hi and reduce for 10min to about 2 TBS.
  2. 2.Lower heat to medium, add mushrooms, cook 5-7 min. until softened.
  3. Raise heat to hi, add cream, and bring to a boil. Reduce heat to medium and simmer for 15 minutes.
  4. Remove from the heat, add the thyme, season to taste with salt and pepper
  5. spoon over tamale
