Wild Mushroom Tamale With Black Truffles
- 1/2c Olive Oil
- 2tbs. minced garlic
- 1/4c diced onion
- 1c white wine
- 6c sliced fresh shiitake,cremini, portabello any combo.
- 2c heavy cream
- 3tbs. fresh thyme leaves
- salt and freshly ground pepper
- 10 Basic Tamales
- fresh black truffles
- 1. In a sauce pan over medium heat, heat the olive oil and sweat the galic and onion for 2 minutes. Add the wine, raise the heat to hi and reduce for 10min to about 2 TBS.
- 2.Lower heat to medium, add mushrooms, cook 5-7 min. until softened.
- Raise heat to hi, add cream, and bring to a boil. Reduce heat to medium and simmer for 15 minutes.
- Remove from the heat, add the thyme, season to taste with salt and pepper
- spoon over tamale
