Rainbow Vegan Curry Stir Fry
- 1 Red Bell Pepper
- 1 Zucchini
- 1 bunch Bok Choy
- 1 can Water Chestnuts
- 1 can Bamboo Shoots
- 1 bunch Broccoli
- 1 bunch Cauliflower
- 1 bunch red cabbage
- 1 bunch snow peas
- 1 handful Cashews
- 1 can Coconut Milk (full fat)
- 1 can Red Chili Paste (thai kitchen, small can)
- 1 cup rice vinegar
- 1 tablespoon chili oil
- 1 tablespoon sesame oil
- 1 tablespoon Fresh Ginger
- 2 cloves Garlic
- 1 teaspoon sea salt
- 1 tablespoon turmeric
- 1 teaspoon red pepper flakes
- 1 package Soba noodles
- 3 sticks carrots
- Prepare Soba noodles separately according to package.
- Saute the sauce and all ingredients until well cooked. Pour over noodles.
