Chocolate Pie
- 4 Tbsp cornstarch
- 1 1/2 cup sugar
- 1/2 tsp salt
- 9 Tbsp Hershey's Cocoa
- 2 1/2 cups milk
- 4 egg yolks, slightly beaten
- 3 Tbsp butter
- 2 tsp vanilla
- 4 egg whites
- 4 Tbsp sugar
- 1 pie shell, baked
- In medium pan, add cornstarch, sugar, salt, and cocoa.
- Mix well. Add milk and stir well.
- Add egg yolks.
- Mix completely.
- Cook over med heat, stirring constantly until mixture starts to thicken and boil.
- Cook 1 minute more, stirring quickly.
- Remove from heat. Stir in butter and vanilla.
- Cool slightly, pour into baked pie shell.
- Set aside.
- Beat egg whites until soft peaks form.
- Add 4 Tbsp sugar and beat until very stiff.
- Spoon onto pie, making sure to touch edges with meringue.
- Cool and serve cold.
