Fruit Salsa And Cinnamon Chips
- 2 Kiwis, peeled and diced
- 2 Fuji Apples, peeled and diced
- 8 oz raspberries
- 16 oz strawberries
- 1/2 Tbsp brown sugar
- 3 tbsp any fruit preserves (I like orange for the tanginess)
- 10 (10 inch) flour tortillas
- 2 tbsp butter or butter-flavored cooking spray
- 2C cinnamon sugar
- 1. In a large bowl, thoroughly mix kiwis, raspberries, strawberries, brown sugar, fruit preserves, and apples (remember to add apples last). Cover and chill in the refrigerator no less than 15 minutes.
- 2. Preheat oven to 350 degrees F (175 degrees C).
- 3. Use cooking spray or melt butter to coat one side of each flour tortilla. Cut into triangles and arrange in a single layer on a large baking sheet. Sprinkle with desired amount of cinnamon sugar. Bake 8 to 10 minutes, until crisp.
- 4. Allow about 15 minutes for chips to cool, serve with chilled fruit salsa.
