Rosen Ribs/Bbq

  1. Grind Chicory to power in processor (1T for sauce 2T for rub) or use french market coffee
  2. Heat oil and butter med high heat in large sauce pan
  3. add onion and sauce until pale golden, about 5 min .
  4. Add garlic and saute 2 min .
  5. Add chicory, cinnamon, allspice, chili powder and ginger . Cook 3 min to blend flavors stirring occasionally
  6. Add Bourbon, vinegar, O.J. , maple syrup, molasses, Worcestershire, pepper, liquid smoke, salt, chili sauce and coffee
  7. Reduce heat and cook mixture till thick and glossy about 45 min
  8. Add orange peel and cook 5 min . Can be made ahead , cover and store in fridge
  9. Rib: combine rub ingredients , rub into ribs let stand 2hrs-overnight
  10. grill or smoke brush w/ mop occasionally
  11. when done brush w/ glaze cook 5-10 more min
