Italian Sausage & Peppers
- 6 big links of any type of tube/link sweet italian sausage
- 16 bell peppers, yellow, green, red or any combination
- 4 big cloves choped garlic
- 1 cup cured black olives or regular black olives
- 3/4 cup shelled pinon nuts
- 1 small can of tomato sauce (optional)
- 1/4 cup olive oil
- garlic salt
- pepper
- Fresh French Bread or Italian baguette.
- Cut up the sausage in to 1-2 inch links and set in flat roasting pan, cut up each bell pepper in to four big sections and add to the pan, add the garlic, black olives,pinon nuts and mix together in the flat roasting pan. Once you have mixed it all up, add the pepper and garlic salt then drizzle the olive oil all over the ingredients. If you want to add a can of tomato sauce just pour all over the ingredients in the pan. It may be necessary to drizzle a bit more olive oil as you cook the sausage & peppers. Cover with tin foil and bake at 350 for 1 hour. Once it's done put mixture of sausage & peppers on the French Bread or Italian baguette and serve.
