Fried Chicken With Poblano Mashed Potatoes And Chorizo Thyme Gravy
- Gravy:
- 1 TBL Olive oil
- 1/2 lb chorizo
- 1C chopped onion
- 1 TBL flour
- 1 1/2 tsp worchestershire
- 2 C cream
- 1 C milk
- 2 chopped green onions
- 1 TBL thyme - fresh
- 1 TBL chopped serrano chile
- Fried chicken:
- 6 chicken breast halves
- 2 cups buttermilk
- Poblano Mashed potatoes:
- 2 lg chared & peeled, seeded and choped chilies
- 4 lb red potatoes cubed
- 1 C 1/2 & 1/2
- 1 stick butter
- 1 C sour cream
- 1 TBL ea salt & pepper
- gravy:
- saute chorizo & onion in olive oil, add flour and worchestershire, cream milk & simmer until thick. Mix in green onion chilis and thyme, salt & pepper - 2 min.
- Chicken:
- marrinate in buttermilk 4 hrs or overnight. Dredge in flour, salt & pepper and fry in 1 1/2" oil at 375. turn once, about 8 min.
- Potatoes:
- heat 1/2 & 1/2 and butter, when melted add to cooked potatoes and mash, stirr in sour cream and chilies.
