Molasses Oatmeal Cookies
- 1/2 c. shortening
- 3/4 c. light molasses
- 1 egg
- 1 1/2 c. sifted flour
- 1/2 tsp. salt
- 1/2 tsp. soda
- 2 tsp. cinnamon
- 1/2 tsp. baking powder
- 1/2 tsp. nutmeg
- 1 1/2 c. oats
- 1/2 c. chopped walnuts
- 1 c. seedless raisins
- 1/4 c. sugar
- Cream shortening and molasses in bowl until light and fluffy. Beat in egg.
- Combine flour, salt, soda, cinnamon, baking powder and nutmeg in large bowl; mix well.
- Add to creamed mixture.
- Stir in oats, walnuts and raisins; mix well.
- Chill, covered, for several hours.
- Shape into balls.
- Roll in sugar.
- Place on greased cookie sheet.
- Bake at 375u0b0 for 12 to 15 minutes or until lightly browned.
- Yield:
- 54 servings.
