Quinoa Bowl
- Dressing:
- 2 garlic cloves
- 2 T balsamic vinegar
- 1 T maple syrup
- 1 t dijon mustard
- 2 t chipotle puree (or more)
- 1/2 t salt
- 1/2 t pepper
- 1/2 c olive oil
- Tofu cubes:
- 1 block of extra firm tofu
- sesame oil/chili oil/olive oil
- soy sauce
- curry powder
- 3 c cooked quinoa
- 1 cob corn cooked, corn cut off
- 2 avocados diced
- 1/2 c sundried tomatoes chopped
- 1/3 c toasted pine nuts
- 1 c shredded aged cheddar
- any other veggies in the fridge
- dice tofu and marinate in oil/soy/curry powder mix. bake at 425F until golden but not too crispy.
- blend all dressing ingredients together and season to taste.
- Mix all ingredients, quinoa, dressing, and baked tofu cubes in a bowl. Can serve immediately, also good next day when dressing has really soaked into grains.
