Quinoa Bowl

  1. dice tofu and marinate in oil/soy/curry powder mix. bake at 425F until golden but not too crispy.
  2. blend all dressing ingredients together and season to taste.
  3. Mix all ingredients, quinoa, dressing, and baked tofu cubes in a bowl. Can serve immediately, also good next day when dressing has really soaked into grains.
