Grilled Thai-Style Tilapia
- 4 tilapia fillets, about 5-6 ounces
- 8-10 cloves garlic, minced
- 1/3 cup cilantro leaves, coarsely chopped
- 1/4 cup olive oil
- 1/4 cup lime juice
- 2 1/2 tablespoons fish sauce
- 2 teaspoons white pepper
- 2 teaspoons sugar
- 1 teaspoon coriander, ground
- 1 teaspoon kosher salt
- Place all ingredients, besides tilapia, in a blender or food processor. Mix ingredients into a paste. Place fillets in a shallow dish and coat tops with paste. Cover and allow to marinate in refrigerator for 30-60 minutes.
- Preheat grill for high heat. Place tilapia fillets on an oiled grill rack, paste side up. Cook for 15-20 minutes, or until fish flakes easily with a fork. Remember not to turn fillets. Remove from heat and serve.
