Spanish Chicken
- 1 fat hen, cut into pieces
- salt to taste
- flour
- cooking oil
- 1 large onion, finely chopped
- 1 clove garlic, grated
- bacon drippings
- 1 qt. tomatoes, strained
- 1 can tomato paste
- 1 Tbsp. chili powder
- 1 bell pepper, chopped
- 1 c. corn meal
- 1 can cream-style corn
- Season and flour chicken pieces; place in skillet and brown in hot oil until golden. Cover with water and boil gently until tender. Saute onion and garlic in bacon drippings; add to chicken with remaining ingredients, except corn meal and corn. Mix thoroughly. Add a small amount of water to corn meal, stirring until smooth. Add to chicken mixture and boil until thickened. Pour into a baking dish; top with creamed corn and bake in a 350u0b0 oven until brown. Makes 10 servings.
