South Carolina Low Country Dressing
- 2 c. corn meal
- 1 1/2 c. milk
- 1 egg
- 1 Tbsp. melted shortening
- 1 medium sized onion
- 3 to 4 cans chicken broth
- 2 to 3 Tbsp. sage
- 2 eggs
- 2 cans cream of mushroom soup
- 1 Tbsp. poultry seasoning
- Mix meal, milk, egg and shortening.
- Pour into skillet and bake at 350u0b0 for 30 minutes.
- In large mixing bowl, put bread pieces and pour part of heated broth; let this soak, then crumble corn bread into bowl and pour remaining broth.
- Saute onion in 1 stick of butter, then add this to dressing.
- Add seasonings; mix well.
- Should be very soupy.
- Add beaten eggs and mix well.
- Pour into greased casserole dish and bake at 375u0b0 for about 1 hour until browned on top.
