Tomato And Goat Cheese Crustini

  1. Pre-heat oven 350F
  2. Slice baguette into 1/2" slices lay on sheet pan in single layer and brush with EVOO. place in pre-heated oven aprox. 5 min or until lightly browned.
  3. Remove from oven and rub with cut side of garlic clove and cool on rack.
  4. Quarter or dice tomatoes depending on how chunky you like them. In a bowl crumble goat cheese and combine with tomatoes. Drizzle with EVOO and Balsamic Vinegar. Season with salt and cracked black pepper.
  5. Spoon Tomato goat cheese mixture onto garlic crustini and serve.
  6. If you're a basil lover, try to get your hands on some purple basil to add a little more flare. Simply chiffanod the basil and combine with goat cheese tomato mixture.
