Tomato And Goat Cheese Crustini
- Demi Baguette
- Extra virgin Olive Oil
- 1 clove of garlic sliced in half
- 1 pint cherry or grape tomatoes, quatered or diced
- 4 oz log Goat Cheese, crumbled
- Balsamic Vinegar
- Salt
- Fresh Cracked Black Pepper
- Optional
- Pre-heat oven 350F
- Slice baguette into 1/2" slices lay on sheet pan in single layer and brush with EVOO. place in pre-heated oven aprox. 5 min or until lightly browned.
- Remove from oven and rub with cut side of garlic clove and cool on rack.
- Quarter or dice tomatoes depending on how chunky you like them. In a bowl crumble goat cheese and combine with tomatoes. Drizzle with EVOO and Balsamic Vinegar. Season with salt and cracked black pepper.
- Spoon Tomato goat cheese mixture onto garlic crustini and serve.
- If you're a basil lover, try to get your hands on some purple basil to add a little more flare. Simply chiffanod the basil and combine with goat cheese tomato mixture.
