Brown Rice Primavera
- 3/4 cup water
- 1/2 teaspoon chicken bouillon granules
- 2 cloves garlic, minced
- 3/4 cup instant brown rice, uncooked
- Vegetable cooking spray
- 1 cup frozen French-style green beans, thawed and drained
- 1 cup sliced fresh mushrooms
- 1/2 cup diced sweet red pepper
- 2 Tablespoons grated Parmesan cheese
- 1) Combine first 3 ingredients in a medium saucepan; bring to a boil. Stir in rice in rice; cover, reduce heat, and simmer 5 minutes. Remove from heat, and let stand 5 minutes or until liquid is absorbed. Set aside, and keep warm.
- 2) Coat a large skillet with cooking spray; place over medium heat until hot. Add green beans; saute 2 minutes. Add mushrooms and red pepper; saute 3 minutes or until pepper is crisp-tender.
- 3) Add green bean mixture and Parmesan cheese to rice mixture; toss well.
