Pecan Pie From Sally Gray Helvenston
- Pecan Pastry
- 1 cup all-purpose flour
- 1/4 cup ground pecans
- 1/4 tsp. salt
- 1/4 cup + 2 Tbs butter
- 1 Tbs brandy
- 1-2 Tbs cold water
- Double Pecan Pie
- 1 cup light corn syrup
- 3/4 cup sugar
- 3 eggs
- 3 Tbs butter, melted
- 1 (or 2) Tbs brandy
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1 cup pecan pieces
- 1 cup pecan halves
- Pecan Pastry (see below)
- 9" pie plate
- Pecan Pastry
- Combine flour, pecans, salt; cut in butter. Sprinkle with brandy and water. Form into a ball; chill 30 minutes before rolling out.
- Double Pecan Pie
- Combine these ingredients; beat at medium speed until blended. Stir in pecan pieces. Pour into pastry. Top with pecan halves (use a circular or spiral pattern for a decorative effect). Bake at 350 degrees for 50-60 minutes. Cover edges with foil if necessary.
