Williams Family Chili
- 3 T Oil
- 2 Onions (chopped)
- 4-6 Garlic cloves (minced)
- 2-3 Bouillon cubes
- 1 lb. Ground beef
- 1.5 lbs Marinated flap meat
- 1 32oz. Can whole tomatoes
- 1 16oz. Can diced tomatoes
- 1 32oz. Can refried beans
- 1 can tomato paste
- 1 can beer
- 9 t chili powder
- 1 can minced chilies
- 2 t salt
- 1/2 t ground red pepper
- 1/2 t pepper
- 2-3 bay leaves
- For Carne Asada Marinade:
- 1 cup cheap salsa
- 1/2 Onion
- 3 Garlic Cloves
- 1 T salt
- 1/2 T pepper
- 1 Handful cilantro
- 1/4 C vegetable oil
- Marinate flap meat in carne asada marinade for 1-2 days before making chili (blend carne asada ingredients in a blender and combine with meat in a zip-lock bag).
- Saute 1 diced onion in oil until brown. Add ground beef and brown. Drain excess oil. add minced garlic and saute for 2-3 minutes. Add remaining ingredients, except for flap meat. BBQ the carne asada, chop into small pieces and add to simmering chili. Simmer for 3 hours and eat.
