Swiss Chard And Honey Glazed Carrot Salad

  1. Mince garlic
  2. Slice carrot thinly
  3. Dice red onion
  4. Remove stems from swiss chard and cut into large rectangles
  5. In medium hot pan add 1 tsp olive oil. When pan and oil are hot, add garlic and saute until fragrant.
  6. Add carrots and cook for 2 minutes.
  7. Salt and pepper
  8. Add 1 tsp honey and stir carrots so that they are covered evenly.
  9. Cook for 3 minutes.
  10. Add lime
  11. Add red onion cook until slightly transparent about 2 -3 minutes.
  12. Add baby bella mushrooms cook for 2 minutes until slightly soft but still firm.
  13. Add swiss chard (make sure they are washed and dried).
  14. Cook for 1 minute until all greens have turned slightly dark, but have not completely wilted.
  15. Place sauteed vegetables into a bowl. Add pepitas and salt and pepper to taste. Toss. Serve warm.
