Quick Pineapple Cake
- 2 eggs
- 1- 20 oz. can crushed pineapple, undrained
- 2 c. all purpose flour
- 1 c. sugar
- 1 c. brown sugar
- 2 tsp. baking soda
- 1 c. black walnuts, chopped
- 3 oz. cream cheese, softened
- 1/4 c. butter or margarine
- 1 tsp. vanilla
- 2 c. powdered sugar
- 1/2 tsp. ground ginger
- In a large mixing bowl, beat eggs until light and fluffy. Add pineapple, flour, sugars and baking soda.
- Mix ingredients well by hand.
- Stir in walnuts and spread batter in an ungreased 13 inch x 9 inch pan.
- Bake in preheated 350 degree oven for 45 - 50 minutes or until toothpick inserted in center comes out clean. After cake cools, cover with cream cheese ginger frosting, then sprinkle additional walnuts on top.
- To make frosting, beat together cream cheese, butter and vanilla in a small bowl.
