Shrimp Fra Dialbloita
- 12 - 18 Medium Shrimp, cleaned and deveined
- 2 T. Olive Oil
- Salt and pepper to taste
- Cracked Red pepper. a dash depending on personal heat preference.
- 6 corn or flour tortillas, your choice
- 2 C. grated white cheddar or pepperjack cheese
- 1 Red, yellow or orange bell pepper, sliced thin
- 1 yellow onion, sliced thin
- 1-2 avacados, peeled and sliced
- sour cream
- salsa
- 1 lime, cut into wedges
- sliced pickled jalapenos
- 1.Saute onion and bell pepper in olive oil for two minutes oner medium heat. Add shrimp. Sprinkle salt, pepper and cracked red pepper in saute pan. Turn Shrimp after about a minute or two. Shrimp is done when pink. Remove from heat sourse. Set aside.
- 2. Warm tortillas in a dry pan over medium heat until softened.
- 3. Fill tortillas w/ Shrimp, onion, pepper mixture. Garnish w/ avacado, sour cream, salsa, lime juice, jalapeno.
- 4. Chow down and go back for seconds and thirds.
- 5. Serve w/ a crisp dry white wine, ice cold Mexican beer, Margarita or Iced Sun Tea.
