Dan'S Bacon Brussels Sprouts
- 6 slices bacon, chopped
- 1/2 cup, sliced shallot (about 1 large)
- 1.5 pounds, Brussels sprouts, trimmed and halved
- 6 cloves, garlic, thinly sliced
- 0.75 cups, low-salt chicken broth
- 1/8 teaspoon, salt
- 1/8 teaspoon, pepper
- 1) Heat large skillet over medium-high heat
- 2) Add bacon, and saute for 5 minutes or until bacon begins to brown
- 3) Remove pan from heat, remove the bacon from the pan, reserving 1 tablespoon drippings (discard the rest)
- 4) Return pan to medium-high heat, and stir in bacon, shallot, and Brussels sprouts
- 5) Saute 4 minutes or until garlic begins to brown
- 6) Add the chicken broth, and bring to a boil
- 7) Cook for 2 minutes or until the broth mostly evaporates and the sprout are crisp-tender, stirring occasionally
- 8) Remove from heat, and stir in salt and pepper
