Chicken Cobb Salad
- 1 head romaine lettuce
- 1 cup baby spinach
- 2 whole chicken breast, cooked and cut into strips
- 4 slices of bacon
- 1 avocado, diced or sliced
- 2 hard boiled eggs, finely chopped
- 1 tomato, diced
- 1/2 cucumber, sliced
- 1/2 crumbled bleu cheese
- Dressing of Choice
- 1. Cook the bacon in a skillet until crisp on both sides. Remove from stove and lay out on paper towels to absorb the excess grease. Allow the bacon to cool, then crumble the bacon and set aside.
- 2. Rinse off/clean the romaine and baby spinach. Chop romaine lettuce and toss the romaine lettuce and the baby spinach together in a large salad bowl.
- 3. Whisk the remaining ingredients together to form the cobb salad, then add the bacon. (You can get creative with this step if you want to make it look pretty; it all goes down the same way so I tend to skip this part.)
- 4. Serve with the dressing of your choice and enjoy!
