Crawfish Tortollini

  1. Prepare tortellini as directed on package. Drain.
  2. In large skillet: saute onion and garlic in butter until translucent. Add crawfish and cook 5 minutes. Add Parmesan Cheese, parsley, whipping cream and cornstarch mix. Heat until cheese melts and sauce thickens a bit.
  3. Fold tortellini into sauce. Season to taste with salt and red pepper. Pour all into an oiled/sprayed casserole and sprinkle with more Parmesan Cheese. Bake at 375 until hot and bubbly, 20-30 minutes.
  4. Substitutions that are good: Shrimp, chicken breast
