Crawfish Tortollini
- 2 pkgs. Tortellini w/Parmesan Cheese, fresh not dried
- 1 stick butter
- 1 medium onion, finely chopped
- 2 cloves garlic, finely chopped
- 1 pound crawfish tails, thawed and slightly rinsed
- 1/2-cup Parmesan Cheese
- 1 pint whipping cream
- 2 tsp. cornstarch mixed in 1/4-cup cold water
- 1/8-cup fresh chopped parsley
- Salt and Red pepper to taste
- Prepare tortellini as directed on package. Drain.
- In large skillet: saute onion and garlic in butter until translucent. Add crawfish and cook 5 minutes. Add Parmesan Cheese, parsley, whipping cream and cornstarch mix. Heat until cheese melts and sauce thickens a bit.
- Fold tortellini into sauce. Season to taste with salt and red pepper. Pour all into an oiled/sprayed casserole and sprinkle with more Parmesan Cheese. Bake at 375 until hot and bubbly, 20-30 minutes.
- Substitutions that are good: Shrimp, chicken breast
